Cake Making Course Details: Course Overview

The course starts with the basics. You will learn about the equipment and ingredients used in cake making, along with whipped cream preparation and early practice in writing and flower piping. From here, you move into your first sponge cakes. You will practice making sugar syrup and basic sponge batter, which forms the base of almost every cake you will bake later.

Once you are comfortable with the sponge, you move into layering and filling. This is where a cake starts looking like a real cake. You will bake a vanilla cake and learn decoration like smooth icing, star piping, and writing on cakes. You will also prepare a White Forest cake and a chocolate cake finished with sugar syrup, drip, and basic decoration.

From there, the course moves into flavour and technique building. You will bake and decorate a Black Forest cake, and learn a chocolate decoration technique using white and black chocolate compound. You will also make an eggless chocolate cake, which is useful if you plan to serve customers with different preferences, along with chocolate garnishes in both black and white.

The middle weeks focus on fruit flavoured cakes such as strawberry and pineapple, along with more advanced piping work like flower piping, borders, rosettes, shell borders, and basket weave patterns. You will also prepare a butterscotch cake and practice crumb coating, which is the step that gives a cake a clean, smooth base before final decoration.

In the final stretch, you will work with raspberry and blueberry cakes, design a full theme-based or birthday cake, bake a coffee-flavoured cake, and learn caramel techniques including pouring and simple caramel decoration.
